Spicy Sausage & Shrimp with Cheesy Grits

  • 3 lbs Spicy Sausage – Andouile or similar
  • 3 lbs large shrimp – tails on
  • Instant grits
  • water
  • copious amounts of butter
  • bag of shredded cheddar cheese

Start by cooking the sausage in a hot grill pan or in a cast iron pan on a propane burner. When done, boil some water (as directed by the amount of grits you want) and add instant grits. Add desired (read lots) amount of butter and cheese (whole bag) and stir until a thick, butter, cheesy goodness is left. As the grits are cooling, quickly saute the shrimp in the fat and spices from the sausage. Add additonal cajun spices if more heat is desired. Serve a bowl full of steaming, cheesy grits with some sausage slices and a few large shrimp.
